How it all began

A ritual with thousands of years of history

According to legend, it was in the year 2737 BC that a leaf from a wild tea bush fell into the boiling water of the Chinese emperor Shen Nong (also known as Chen Nung). Fascinated by the aroma and taste of the infusion, he is said to have tasted the drink and thus laid the foundations for a tea culture that is thousands of years old.

From China, tea spread via trade routes to Japan and later to Europe. In the 17th century, Dutch merchants initially brought it to the European market as a precious commodity and valued remedy. What began as a medicinal elixir quickly developed into a social ritual.

In the American colonies, tea eventually became a symbol of political self-determination: the Boston Tea Party of 1773 not only marked a turning point in the history of tea, but also the beginning of the American War of Independence.

To this day, tea is far more than just a drink - it is a cultural carrier, commodity, ritual and historical companion all in one.

Weighing in

The first step in tea tasting is the precise weighing of the raw material. As each leaf can vary in structure and volume, absolute accuracy is essential - because even the smallest deviations affect the taste profile.

Traditionally, 2.86 grams of tea are used - exactly the weight of the historic British sixpence coin. A measure with history that is still used today as a reference for professional tastings and forms the basis for an objective assessment.

Gustatory examination

After a standardized infusion time of five minutes, the tea is tasted pure - without milk or sugar, in order to assess its aroma profile unadulterated. Deliberate, vigorous sipping ensures that the infusion is optimally distributed throughout the mouth and allows even the finest nuances to be recognized.

Only when the taste, structure, balance and aftertaste are in perfect harmony is it released for packaging. This ensures that every cup meets the defined quality standards of EILLES TEE - precisely tested and consistently convincing.
