3 very fresh egg yolks
40 g Cane sugar
1 packet Bourbon vanilla sugar
5 cl Amaretto (alternatively freshly squeezed orange juice)
300 ml Whipped cream
70 g Almond amarettini

Step by steps Preparation

  1. 1.Step

    Ingredients Egg yolks, sugar, vanilla sugar, amaretto (or orange juice), cream
    Pour the egg yolks, sugar, vanilla sugar and amaretto (or orange juice) into a metal bowl. Whisk the ingredients over a hot bain-marie until the mixture is frothy and slightly thickened. Beat the mixture in a cold bain-marie until it has cooled down. Whip the cream until stiff.

    Ingredients Cream, amarettini
    Carefully fold in the cream using a spatula. Place the mixture in a wide bowl in the freezer for approx. 3 hours. Stir every 30 minutes during this time. After 2 hours, stir 50 g of coarsely crumbled amarettini into the mixture.

    Ingredients EILLES KAFFEE RÖSTMEISTER Caffè Crema, cream, chocolate
    Boil 500 ml extra strong EILLES KAFFEE, leave to cool in a cold water bath and then place in the fridge. Whip the cream until stiff. Cut out balls from the ice cream and divide them between 4 wide glasses. Carefully pour the ice-cold coffee over them and decorate with cream and sliced chocolate.
