120 g Butter, soft
60 g Powdered sugar
1 Egg yolk
180 g Wheat flour
1 pinch Salt

For the cheesecake mixture

300 g Sugar
100 g Wheat starch
7g Eggs whole egg
390 g Whole milk
1 Lemon zest
60 g Lemon juice
1-2 Vanilla pods (according to size)

Step by steps Preparation

    Ingredients Butter, powdered sugar, egg yolk, EILLES TEE Tea Diamond® Vita Orange, wheat flour, salt
    To make the shortcrust pastry, first mix the soft butter with the powdered sugar and then add the egg yolk.
    Tear open the pyramid bag and add the Vita Orange to the butter mixture and work in.
    Add the wheat flour and salt and knead everything quickly into a smooth shortcrust pastry.
    Cover and leave to rest in a cool place for at least 1 hour.
    Then roll out the dough and line a cake ring (ø 24 cm) with it. Raise the edges by approx. 1 cm; set aside.

    Ingredients Quark, sugar, wheat starch, eggs whole egg, whole milk, lemon zest, lemon juice, vanilla pods (according to size), salt
    Place all the ingredients for the cheesecake mixture in a large bowl and whisk until creamy. Cut the vanilla pod in half and scrape out the seeds. Add the scraped-out pod to the mixture.
  3. 3.Step

    Heat the mixture over a bain-marie and allow to set slightly (the mixture will thicken and become creamy). Whisk well from time to time so that the solidified mixture and the not yet solidified mixture are well combined.
    As soon as the mixture has a firm and creamy consistency (approx. 20-30 minutes), squeeze out the vanilla pod well and remove. Then pour the mixture into the prepared cake ring.
  4. 4.Step

    Bake in the oven at 160 °C (fan oven) for approx. 45 minutes in total. As soon as a light skin has formed on the surface (approx. 15 minutes), use a knife to loosen the mixture from the edge of the cake ring. This allows the cheesecake to rise evenly and sink again when it cools.
